Crushed red pepper made from naturally grown chile de arbol, cayenne, & himo togarashi peppers. Just about any dish can benefit from the addition of crushed reds. Great on farm fresh eggs!

(Sassafras albidum)
Whole dried leaves. Use to make Creole dishes such as file gumbo. File is used as a thickener, but it also imparts a distinct flavor famous in Cajun cuisine. Use a mortar & pestle or coffee grinder to make fresh powder from the dried leaves at time of use for superior flavor.

Fresh whole root. Use fresh ginger to liven up any dish that calls for powdered ginger. The flavor of the fresh root will delight the taste buds in a way that the ground powder never could.

Mint (Apple)

Dried leaves (may be crushed). Use dried mint in tea, or to flavor deserts. Apple mint is sweeter than most mints, very aromatic, & only mildly "spicy".

Dried whole leaves. Oregano is used in most Italian dishes, & many Mexican dishes as well. By crushing the dried leaves at time of use, the robust flavor is all retained.

Dried whole leaves. Plenty of dishes call for sage, but homemade sausage is by far the most popular use. You can't spell "sausage" without "sage". Toss dried leaves into the blender to make powder, or crush the leaves by hand at time of use.

Whole rhizomes. Plenty of recipes call for turmeric, & like most things, fresh turmeric is a giant step above the dried powder from the store. It is the secret ingredient used when pickling jalapenos. Turmeric is widely used as a natural colorant in food products. Rhizomes can be ground with a mortar & pestle, coffee grinder, or blender.
