Eggplant is one vegetable that deserves a spot in every garden. That being said, many gardeners don’t grow it. This likely has a lot to do with not knowing what to do with it after harvest.

Pin Tung is a long slender fruited Asian variety. It’s shape lends itself to some interesting culinary uses. One of our favorite things to do with Ping Tung Eggplant is to make chips just like potato chips. Thinly sliced eggplant is fried in a skillet & lightly salted.

Something else we are quite fond of is french fried eggplant. Just cut the eggplant into french fries & fry them the same as potatoes (they cook faster).

Eggplant seeds should be started indoors 6-8 weeks before your last average frost date & transplanted after any chance of frost has passed.

Start seeds in cellular trays or their equivalent (we use 50 cells). Cells or pots should be roughly the size of a shot glass.

Maintain a soil temperature of at least 70 degrees Fahrenheit for germination.

Eggplant loves warm weather & handles drought very well. Don’t get in too big of a hurry to transplant them if the nights are still excessively cool.

Don’t be surprised if the plants take a while to take off, but once they do they will grow rapidly & start producing like crazy.

Seed Saving
Allow fruit to ripen to the point of turning yellow-white. Cut fruit in half lengthwise & scoop out seeds with a spoon. Rinse in a strainer while separating seeds from the pithy eggplant flesh with your fingers. Dry seeds out on a rag or paper towel until fully dried.

Eggplant
Eggplant is an extraordinary crop with a ridiculous history. During the 16th century there were some truly wild beliefs pertaining to eggplants from various regions around the world. In Spain it was believed that eggplant imparted a romantic effect on those who consumed it. Eggplant was held in high regard for that reason, but at the same time in Northern Europe the same fruit was believed to cause insanity. Up until the early 1900’s, folks in the United States believed eggplant to be extremely poisonous & avoided consuming it at all cost. 
Eggplant belongs to the Solanaceae family along with tomatoes, peppers & potatoes. Whats interesting is that tomatoes, peppers & potatoes are some of the most popular foods in the Western World as well as favorites among backyard gardeners, but eggplant is not very popular at all. This may simply be because of a lack of recipes that include it. In Asia eggplant is one of the most popular vegetables & recipes from that region are in abundance. Our favorite ways to prepare eggplant are thinly sliced chips (just like potato chips) & French fries.
Eggplant is one vegetable that is not only tolerant of heat & drought, it actually prefers it. Don’t get in a hurry to set out transplants because they don’t fair well in cool or wet soils. Wait until the ground warms up considerably & spring rains slow down before planting eggplant in the garden.
Seeds should be started indoors about eight weeks before your average last frost date, & will be ready to transplant in twelve weeks (or at 8 weeks if you live in a temperate region). Start seeds just as you would tomatoes or peppers in cellular trays (50 cells or six packs work best). Seeds can also be started in summer for a fall planting.
Typical pest that plague eggplants are potato bugs, flea beetles, leaf miners & spider mites. 
Potato bugs are common especially in the late summer. Repeated applications of Bacillus thuringiensis (BT) is particularly effective in the control of potato bugs on eggplant. 
Flea beetles, leaf miners & spider mites are difficult to eradicate. Removal & destruction (burning) of affected leaves or plants is the most effective method by far. Application of diatomaceous earth (DE) by dusting is one somewhat effective method of control, while spraying with an aqueous solution containing botanical oils & pyrethrins can be slightly more effective. With any method mentioned, coverage is of extreme importance with an emphasis on the underside of the plants leaves. Don’t leave any part of the plants untreated.
